Mango Chicken Salad Sandwich. Easy, fast, good. We omitted the mayo and sugar, and got vanilla greek yogurt instead (the vanilla part was an accident, but it added sweetness and didn't taste vanilla-y at all when mixed with everything else, so I would do it again).
Avocado Mango Chicken Salad ♦ cooked chicken cut into bite-sized cubes, diced avocado, diced mango, diced red onion, plain non-fat Greek yogurt, lime juice, garlic powder, salt to taste ♦ Mix together all of the ingredients in a bowl. Serve over greens, in a wrap, or on some bread or a croissant.
Chopped chicken, sweet mango and lots of vegetables are combined with a coconut milk dressing in this light and healthy Mango Chicken Salad. Serve on tortillas as a wrap, on a sandwich, or just straight from the bowl! @deborahharroun
