Lettuce Soup... I think I'm actually intrigued enough to try this! (update: I did! Made with Bibb & Arugula and it was really great! I took it to the next level by pureeing some kabocha squash and swirling that (I'm coconut & dairy free, so the suggestions were out of the question) and garnishing with proscuitto.) NOM!
