Chuck's Lemon-Dijon-Turmeric dressing: This recipe comes from the kitchen of Joy Fit Club member, Chuck Voelker! Blend together 1/4 cup fresh lemon juice, 3 Tbsp Dijon mustard, 1/2 tsp turmeric, 1/2 tsp ground cumin, 2-3 tsp toasted walnut oil, salt, pepper and optional hot sauce. Only 15 calories per Tbsp!

California Roll Wrap: Another great lunch idea from Joy Fit Club member, Kimberly. Spread a low-carb multigrain tortilla with homemade wasabi cream cheese (see below), then layer on shredded carrot, sliced cucumber, imitation crab, and avocado. Tightly roll wrap and slice into pieces--just like sushi. Wasabi cream cheese: Soften 2 teaspoons light cream cheese in the microwave (5 seconds or so) and mix with 1 teaspoon light mayonnaise and a pea-sized squirt of wasabi paste (from tube).
