Chuck's Lemon-Dijon-Turmeric dressing: This recipe comes from the kitchen of Joy Fit Club member, Chuck Voelker! Blend together 1/4 cup fresh lemon juice, 3 Tbsp Dijon mustard, 1/2 tsp turmeric, 1/2 tsp ground cumin, 2-3 tsp toasted walnut oil, salt, pepper and optional hot sauce. Only 15 calories per Tbsp!
Are you a recovering carb-aholic? If you're trying to cut back, give this Portabello Supreme Pizza a shot! It's what worked for Joy Fit Club member, Almetria Turner from Memphis, Tennessee. She subs the white carby crust for a portabello mushroom cap and piles on the "supreme" toppings. Feel free to swap in your favorite veggie ingredients, or have a toppings bar for everyone to make their own.
California Roll Wrap: Another great lunch idea from Joy Fit Club member, Kimberly. Spread a low-carb multigrain tortilla with homemade wasabi cream cheese (see below), then layer on shredded carrot, sliced cucumber, imitation crab, and avocado. Tightly roll wrap and slice into pieces--just like sushi. Wasabi cream cheese: Soften 2 teaspoons light cream cheese in the microwave (5 seconds or so) and mix with 1 teaspoon light mayonnaise and a pea-sized squirt of wasabi paste (from tube).
Black Bean Soup: This soup comes courtesy of Joy Fit Club member Jenny Hodges and literally takes 2 minutes to put together. It doesn’t get much easier than that! Jenny makes a huge pot on the weekend, then packs it for lunch during the work week.
