Texas BBQ Rub Smoked Meat Loaf 3 lbs ground beef, 1/2 medium onion, 1/2 medium bell pepper,1 small jalapeño, 6 eggs,  1 1/2 stacks Ritz crackers, 1/2 cup grated Parmesan cheese, 1/3 cup Texas BBQ Rub, 1/4 cup Worcestershire sauce, 1/2 cup of your favorite BBQ Sauce, 1 large foil loaf pan or pan approx. 10x5x4  In large bowl mix all ingredients.  Cook uncovered  2 1/2 to 3 hours at 225 degrees.  Remove and pour BBQ sauce on top of meatloaf and return to pit for 15-20 minutes.  Internal temp…

Slow-Roasted Prime Rib au Jus.  Made this for XMas dinner, it was superb!  I'd never made even a regular old pot roast in the oven before, and this guide made me look like a pro!  Try it, you won't be sorry!  One caveat: I would cook till the internal temp reaches 135 just to be safe.

Meatloaf 3 lbs mix (veal, pork, beef)' 3 eggs, 4 tbs maple syrup, 1 cup Panko bread crumbs, 1 cup chili sauce, 1 tbs each instant coffee, salt, pepper, Worcestershire sauce, 1/2 cup milk, 1/2 cup chopped onion, 3 tbs mustard.  Grease shallow pan, bake at 350 for 1 hour. Remove from oven, glaze top with chili sauce or favorite BBQ sauce and bake an additional 15 minutes. Internal temp should be between 160 and 170 for medium well.
