These are a fairly quick and healthy dinner idea. It is easy to switch things up while keeping it simple. I also like how rice bowls don't require one specific recipe and you can add any ingredient you like.
Broccoli Chickpea Rice Bowl (vegan, gluten-free) I used orange juice instead of pineapple & rice wine vinegar instead of lemon juice & parsley instead of cilantro. I also microwaved frozen broccoli & frozen rice instead of making them.
