PORK SOUVLAKI with CUCUMBER-PINEAPPLE SALSA • Ingredients • Salsa: 1-1½ C fresh pineapple chopped into ½” even chunks, 1 Lebanese or small cucumber deseeded and chopped into even slices, ½ red onion thinly sliced, 1 whole chilli thinly sliced, 2 Tb freshly chopped coriander (cilantro), 1 tsp salt, Juice of ½ a lime • Souvlaki: 1 lb pork belly or pork butt cut into even cubes, 1 tsp Spanish smoked paprika, 1 tsp ground fennel, ½ tsp ground cumin, 2 tsp sea salt, Freshly ground black pepper
An Italian friend of mine had an Italian restaurant and used this recipe for over 30 years. When he retired, he graciously consented to passing it on to me. I will share it with you. It is excellent as meatballs, in spaghetti sauce, hamburger patties, or on pizza. This Recipe was prized by him and revered by many. We are lucky to have gotten this Recipe.
