You could use the poster and each day tell the students they couldn't use one of the words in yellow and they had to replace it with one of the words below it. It could be a weekly thing.

There are between 500,000 and 1 million words in the English language depending on how you classify words (i.e., include/exclude proper nouns, technical jargon, slang, etc.). The average adult uses between 10,000-60,000. So, spruce up! There are some seriously under-utilized words out there just begging to be used.
Love this idea! Synonym Garden - paint chips/boring words/thesaurus. Boring word goes on palest color, more interesting words go on vibrant color. Make a bulletin board out of all the words to be used throughout year when writing/speaking.
