Jamie Oliver's spinach and sweet potato frittata. So simple and more delicious than you'd expect. I tweaked it a bit - cut my sweet potato into small cubes and sautéed it in coconut oil until soft, then threw the spinach in to wilt. Also added some back bacon cubes (needed using). Didn't have any cheddar but did have spreadable feta so threw that in. 15 minutes in the oven and good to go!
