Amaranth is an amazing pseudo grain, related to quinoa. It contains more protein and iron than quinoa, is easy to grow (and use), and produces gorgeous tassels (they're grown for wedding bouquets!), and contains much less saponins than quinoa (so it's less bitter). Plus you can use the greens like spinach - fresh, sauteed, etc.
