Black currant fruit leather. Bring to boil currants with just enough water to cover bottom of pan. Bring to boil for 1 minute to get the juices flowing, remove from heat, let stand till cool, spread on wax paper or parchment in your dehydrator. Process to your manufacturer's instructions.
So refined, graceful and pure, with stony white fruit, a note of topicality, its sunny-cum-salty disposition reminds me of Etna Bianco. Lots of white currant fruit, quasi Riesling in its purity and lemon/lime zip. Delicious but with the structure to evolve in bottle should you wish.
