Acapulco’s Queso Dip:  Ingredients:  4 cups White American extra melt cheese  1 cup milk  4 oz Jalapenos in escabeche      Blend 1 can of Costena Jalepenos in Escabeche to a puree consistency and portion 4oz.      Add 1 cup of milk to a 2 qt sauce pan and bring to a boil. Please make sure to continuously stir with a whisk so it won’t burn.      Turn off the flame immediately and add 1 cup of cheese at a time while whisking until you have added all the cheese.      Add 4 oz of jalapeno puree.

Mix pasta, one cup of cheese, cream, tuna, broccoli and soup. Top with corn flakes and last cup of cheese. Bake at 425 for 25 minutes.

I wanted a lower calorie and lower fat version so I used 3 cups of cauliflower and replaced the 1 cup of cheese in the crust with 1/2 cup of Masa. I also cooked it on parchment coated with olive oil. In a large skillet, cook bacon, onions & peppers on medium-high heat for about 5 minutes or until bacon is crisp. Be sure to stir occasionally. Transfer this mixture in to a large bowl. Now add potatoes, soup, sour cream, 1 cup of cheese and mix lightly. Spoon this mixture into a 13x9-inch baking dish. Top with remaining cheese & bake for 40-45 minutes. Now go ahead & serve!
