crème fraîche salmon - This salmon was absolutely fantastic! I didn't have any shallots, so I chopped up some onions and it worked just fine. I served this over steamed broccoli and a harvest grains mix. One of my favorite salmon dishes i've made!
If, like me, you can't find creme fraiche in your grocery store, it's really simple to make your own. I left mine out overnight - almost 24 hours - and it was the perfect consistency. Store in sealed glass jar in fridge.

Make crème fraîche, 1 pint heavy cream + 2 table spoons cultured buttermilk just combine buttermilk with heavy cream, cover and allow to rest at room temperature until thickened, up to 12 hours. Store in fridge up to 2 weeks.
