Mom's City Chicken--I first had this dish when my Polish husband's father made them years ago, and I fell in LOVE! I'm thrilled to find this version which eliminates the frying step without sacrificing flavor.
City Chicken Recipe - My Grandma's recipe for City Chicken! So good! There are so many versions of city chicken - all started when chicken was too expensive during the Great Depression. A staple in many farm homes still in the Midwest! http://www.sistersshoppingonashoestring.com/city-chicken-recipe
City Chicken. I grew up on City Chicken, and love it! For those who don't know, it is not chicken at all, but pork (sometimes veal) chunks on skewers. This recipe is pretty close to what I grew up making. Try it!
City Chicken....I thought FOR SURE no one but MY family made this!! :) my grocery store did not have veal or pork shoulder so I used beef stew meat and boneless pork chops. The skewer, season, flour, egg, bread part took about 1/2 an hour so plan accordingly. Over season! I thought I had plenty and everyone still added salt.
City Chicken ~~~ "This is an old-timey favorite at our house. If you don’t know what City Chicken is, here’s a hint: It ain’t chicken...That’s right…City Chicken is actually pork and sometimes even veal and/or beef, but never chicken. A popular dish in Pittsburgh and the surrounding region, this mock-chicken dinner has been handed down for generations over the past century." ~ Faithfulness Farm
