Classic Carrot Cake - no raisins or coconut... just the way I like it. Secret: Crushed Pineapple - so moist. Also, I replaced 1/2 oil with buttermilk; and substituted chopped pecans for chopped walnuts.
Carrot Cake (Cake Mix): 1 spice cake mix. 1 c diced carrots (I chop mine in a food processor). 1/3 cup vegetable oil. 4 eggs. 8 ozs crushed pineapple(with juice undrained). optional: 1/2 c chopped pecans, 1/2 c raisins.
