Though there are probably thousands of recipes out there for ginger dressing, most fall into two categories: creamy and chunky. Both have their virtues, but like anything, everyone has a favorite. During my years in the Japanese restaurant biz, I learned how to make both. A bumper crop on carrots inspired me to finally hammer down recipes for each. Enjoy!

Popeye's red beans and rice copy cat recipe!!!!! I LOVE Popeye's! I made this tonight. I subbed olive oil and butter for the fat and didn't use a ham hock. It was sooooo good!! I also fubbed the spices a little bit. Its all about the food processor!
Cracker Barrel Ham and Cheese Casserole. This use to be my favorite meal at Cracker Barrel and they only served it on the weekend, and if you didn't get there early enough, you didn't get any. Now they don't make it anymore. But I have made this recipe many times and it is exactly like theirs. Just don't use too much sour dough bread, it will rise.
