Chicken Fried Chicken with Southern Peppered Milk Gravy
Similar to our beloved southern fried chicken, a boneless, skinless chicken breast is pounded thin, dredged in flour and fried. Served with a drizzle of creamy milk gravy made from some of the pan drippings, it is truly good ole comfort food.
Spicy Extra-Crispy Fried Chicken ~ Chicken is soaked in buttermilk overnight. Dipped in egg wash, then dredged in seasoned flour twice. **Add 1 Tsp baking powder per cup of flour. ***Critical Step : Lay dredged chicken pieces on wire rack & let rest 20-30 minutes, until flour coating appears to be moist. This is what makes the crispest crust.
Cornflake Crusted Chicken. Made this for my boys last night and they loved it! I cut the chicken breasts into strips so it was more fun for them to eat. And since I didn't have poultry seasoning, I used Season All instead and it was great! I also mixed the seasoning in with the Cornflake and butter crust mixture. Will definitely be a regular meal!
