Fat Free Carrot Cake - - 1 1/4 cup unsweetened applesauce - 1 1/2 cup white sugar Or equivalent of splenda - 3 eggs - 2 cups oat flour - 1 tsp baking soda mixed with 1 tbsp lemon juice or apple vinegar to activate - 1 1/2 tsp baking powder - 1/2 tsp salt - 3 cups grated carrots - 1 tsp vanilla - 1 cup Dole pineapple in juice, crushed, not drained
