Cinnamon Raisin Brown Rice Pudding: 2 C water 1 C short-grain brown rice 1/2 C cooked wheatberries pinch of salt 4 C milk of choice 1/3 C honey 2 tsp pure vanilla extract 1 tsp ground cinnamon generous 1/2 C raisins
Healthy Rice Pudding - 1c short grain brown rice, 3c almond milk / milk of choice + 1 cup (divided) 1 tsp vanilla, ½ tsp cinnamon, 2-3 tbsp organic cane sugar / coconut palm sugar. Combine all ingredients, but 1 cup of milk in a rice cooker & set timer to "brown rice." Let cook until timer turns off & all water is evaporated. Mix in 1 more cup of milk. Serve hot.
