Stuffed Pepper Explosion Casserole
Stuffed Pepper Explosion Casserole | Who Needs A Cape? Tried and true! I make it easy by using Success boil in bag rice, and add 2 lbs. of hamburger and 2 cans of Rotel instead (my boys like spicy food). I also layer the cheese instead of stirring it in, with the last layer after it cooks (like the directions here). My whole PICKY family likes this! Winner! :)

Chicken Risotto... Although I do an adaptation of it, I use boil in a bag rice, boil it for 10 mins. Then, I use the cooked rice and toss, then use about 3-4 cups of chicken broth (chicken bullion and boiling water) and cook that until it looks about how I want it (however soupy you want it). I also add the Parmesan cheese, butter, and basil at the end, stir and serve. (I don't wait the five extra minutes.)
banh mi bowls with sticky tofu Put rice noodles into a covered pot of boiling water and TURN HEAT OFF, leave for 10 minutes, then drain, rinse in cool water, drain. Mix a bit of sesame oil and rice vinegar over noodles. For tofu I used twice as much soy (redueced sodium) and hoisin and just 1/2 t siracha. Serve with lettuce, cabbage, carrots in rice vinegar, cilantro, mint..

Matcha Green Tea Smoothie
Matcha is a powdered green tea that’s high in antioxidants; you’ll find it in most large natural grocery stores or Asian markets. If you can’t find matcha, steep 4 green tea bags in 1⁄2 cup boiling water for 3 minutes. Remove tea bags and let liquid cool, then add tea to smoothie; reduce rice milk by 1⁄2 cup.
