Moist Blueberry Bran Muffins. These were quick to put together with a minimum of inexpensive ingredients. I quite enjoyed them: the muffin turned out soft and light, and was a perfect mid-morning snack. I used frozen corn because I didn't have any frozen fruit and the little bit of sweetness from the corn was very nice.
