Super basic BARLEY RISOTTO - I use whatever wine I have open, and veg broth. If you don drink add lemon to taste. If you wan to play w this try adding - eggplant, tomato, butternut squash, onion, roasted garlic cloves, brussels sprouts, leeks, mushrooms, kale/chard/mustard greens/etc, Top w toasted walnuts, pecans, pine nuts, sunflower seeds, hazelnuts, etc. and herbs such as fresh sage, cilantro, parsley, basil for garnish.
