"It may seem odd to have a banana and avocado in the same recipe, but the banana completely hides any taste of the avocado. The avocado is there simply for texture and nutritional value. Even kids love this recipe! You can use any unsweetened milk in this recipe - almond, soy, rice, or coconut - and for a little crunch, use raw cocoa nibs instead of the cocoa powder.
These muffins are delicious and have a great texture, and they are 100% healthy! No refined flour or sweeteners. We have a big family, so this recipe makes a lot of muffins, but it is easily halved for a smaller group. To make the muffins lower in fat, replace half of the oil with unsweetened applesauce. I also use white whole-wheat flour, which is softer than that made with red wheat (but has the exact same nutritional value).
No way Jose. Simply too healthy, too easy too delicious! Pumpkin Pie Smoothie 1/2 banana, 1/3 cup pumpkin puree, 1/3 cup plain Greek yogurt , 3/4 cup vanilla almond milk (or vanilla soy milk), few shakes of pumpkin pie spice, 4-5 ice cubes. Done.
