Roasted Sweet Potato Rounds: I peeled and cut them into rounds. Brushed coconut oil (melted) onto foil-lined baking sheet, then onto both sides of rounds. Shook salt & garlic powder onto the top side. Baked 450 for 10 minutes, flipped. Then more garlic & salt, then 8 more minutes.

rub thick sweet potato slices in some oil, salt and pepper and then roast at 350* for 30 minutes then bump up the heat to 400* for the last 20. This method makes them like little pillows – almost like ravioli! Super soft on the inside and almost crispy on the outside. That brown stuff is not maple – it’s sweet potato sap!
