Okra, one of those foods I had growing up. If you cut it into strips, dip it in egg, then in a mixture of breadcrumbs & paprika (and a little salt & pepper), then bake it at 400 for about 15 minutes, you get a delightfully crunchy snack.

Southern Baked “Fried” Okra (on recipe page scroll down to see recipe): = 3 tsp. olive oil for whole recipe, divide by # of servings. May use olive oil-flavored nonstick spray instead. May add Cajun seasoning.

Better Than Fried Okra | This is my recipe --Jade | Egg W/Milk Splash. Roll in cornmeal and parm cheese, salt, pepper and garlic to taste. Bake at 375 for 30 min.

Crunchy Baked Okra 1 bag frozen, cut okra (or fresh, if it’s in season) 2 tablespoons cornmeal 3 tablespoons panko breadcrumbs (if you don’t have panko, regular will work just fine) 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon grated parmesan cheese 2 eggs
