Sheet Pan Eggplant Parmesan is my favorite eggplant recipe that is made by baking breaded eggplant slices on a sheet pan until perfectly golden and then topping them with robust tomato sauce and lots of melty mozzarella cheese.
“Better than Fried” Eggplant Parmesan appetizers. So great! I served this with fresh pasta and marinara. --- Easy and rather quick to make. Sometimes I make little eggplant fries for snacks to dip in marinara. Personally, I like to peel the eggplant before cooking them up.
Crispy Baked Eggplant | I used WW flour and sprinkled them with shredded Parmesian before the oven. My mom used to make me fried eggplant all the time, so I didn't think I'd like it without all the oil, but I did. It tastes really great dipped in any kind of pasta sauce. Also I had to turn the oven way down...it should not be on 475 or the breading burns.
