The Hidden Pantry: Aunt Betty's 1-2-3 Cake. For each individual serving, take out 3 T. of the cake mixture and mix it with 2 T. of water in a small microwave safe coffee mug. Microwave on high for 1 minute. You now have your own instant individual cake.

Easy easy single serve cake in a minute :)   1 box Angel Food cake   1 box any flavor cake   2 T. water  Combine the two mixes in a large plastic bowl with a tightly fitting lid or a zip bag.  For one serving, mix  3 T. of the cake mixture with 2 T. of water in a small microwave safe container like a coffee mug.  Microwave on high for 1 minute.  You now have your own instant individual cake.

Tamale Pie Casserole. I hadn't though of this recipe in years. My aunt Betty made hers with the corn mixed into the cornbread instead of the base. She would also place individual slices/rings of jalapenos in tidy rows on top of the cornbread-- one slice per serving, which was 12 in her big baking dish.  Cannot wait to make this next time we need some comfort food!
