Athlete Food Nachos. 02/17/2015: Good call on adding taco seasoning, plus cooking the red bell pepper & spinach in with the meat. G liked the jalapenos; I liked the tomatoes. We used mozzarella instead of cheddar & it worked fine. Would also use Monterrey jack or pepperjack.
