This is a traditional Appalachian meal in the spring. Fresh garden lettuce and onions are tossed with hot bacon grease and eaten with a piece of cornbread. Tastes even better sprinkled with a little vinegar.
In all my years as a park ranger, bumming meals daily for 25 years from picnickers and campers, these are the finest-tasting baked beans Ive ever eaten. Right out of Appalachia and a super covered dish. Enjoy! big pat.
