On several types of equipment there were lifts that went below deck to another storage/prep galley below.  Most airlines would assign a flight attendant or two below who would send up all the carts and then receive and stow them back after meal services.  Years ago flight attendants would change out of their uniform into sweats as it wasn't that comfy down there.  Some would smoke! haha!  Today the MD-11/10, DC-10's, and a few others still have the below galleys.  The L1011 was my favorite!
