Recipe: Ingredients: * arugula * 8 oz pasta, cooked & rinsed * ½ cup pine nuts * ⅓ cup grated parmesan * 1 tbsp chopped basil Dressing: * Juice of 1 lemon * Zest of 1 lemon * 1/2 cup olive oil * 1 tsp salt * ½ tsp black pepper * 1 tbsp capers * 1 tsp caper brine * 1 tbsp honey * 2 tsp dijon mustard Instructions: 1. Cook pasta according to package instructions. When the pasta is done, drain and rinse it. Set aside to let it cool for a few minutes. 2. Make the dressing in a bowl while the pasta cooks by whisking together all of the dressing ingredients. 3. Add the pasta, parmesan, pine nuts, basil, and arugula to a large bowl. Toss to combine 4. Pour the dressing in and mix again. 6. Add more Parmesan, basil, and lemon zest.
