These DIY fruit and veggie gummies are so much healthier than what you’ll find in a store. Plus, you can make them in bulk for easy lunch or after-work snacks. Just mix 1 ½ cups of fruit or veggie juice with 4 tablespoons of plain gelatin in a saucepan. Whisk it smooth, then stir in 3 tablespoons of honey and ½ teaspoon of vanilla (you can lighten the color by adding a little bit of coconut milk). Chill in a Ziploc®️️ container in the fridge for 2-3 hours, then cube!
