Diane Morrisey on Instagram: "I’m just going to call this dish, ‘Forgetaboutit’ . . Gnocchi simmered in a Pink cheesy cream sauce with fresh spinach is exactly what you all need right now . . Bring a large pot of salted water to a boil for the gnocchi. Heat 1 tbls of olive oil and 2 tbls of butter in a large skillet. Add 4 cloves of chopped garlic and let cook for 1-2 minutes until aromatic. Add 1 (28oz) can of crushed tomatoes and 1/2 tsp of crushed chili flakes and season with salt and pepper. Let cook for 2-3 minutes. At this time I would drop the gnocchi into the water to boil according to package directions. Drain when done. Add 3/4 cup of heavy cream and stir to combine. One with red sauce and one with ricotta. My Dad always preferred ricotta to sauce and I used to love making it for him🥹 Yesterday I bought some terrific local ricotta from Hastings Farm in Suffield, Ct and wanted to showcase it I made one of the most basic and yet delicious pastas. 10 minutes start to finish and that includes the boiling of the pasta.
