Mary Ong-Barsky's Pineapple, coconut milk, basil smoothie. So refreshing. Approx 1/3 cup light coconut milk, one fresh medium pineapple cut up (I used the core as well), 1-2 full sprigs of fresh basil leaves, 12oz glass of ice cubes. Threw it in my Vitamix Blender and voila! A delicious alkaline and enzyme rich treat. My kids LOVE this smoothie!
