Prue Mynard • Dietitian on Instagram: "Christmas Recipes 🎄 ~ PAVLOVA ROCKY ROAD ~ You NEED to make this rocky road! A simple, flavour explosion that even my white chocolate-hating husband liked. It has all the best parts of a pavlova – the soft marshmallow from centre, the crisp meringue from the outside, the mango, which is quintessentially Summer, passionfruit, which just goes with a pav and some extra flavour and texture from the lime zest, nuts and coconut. This Pavlova Rocky Road makes a great gift, is the perfect sweet to bring to your next festive gathering or is simply delicious with a cuppa. Enjoy! Ingredients: 1 cup of chopped dried mango 12 white marshmallows 50g meringue kisses, crumbled ½ cup shredded coconut, toasted 1 tsp finely grated lime zest
Ali Stoner on Instagram: "🎄🏴󠁧󠁢󠁳󠁣󠁴󠁿 WHITE CHRISTMAS 🏴󠁧󠁢󠁳󠁣󠁴󠁿🎄 I think most of us grew up with some version of a Rice Crispie/Rice bubble no bake slice! One of my fave childhood snacks, ours was made with highland toffee and marshmallows, then a friend here in Australia told me about this Aussie festive slice and it brought back all the memories! Makes 24 squares 80g chopped pistachios 80g chopped craisins 200g mini white marshmallows 180g white chocolate 120g Rice Bubbles 100g Copha (or coconut oil) 35g shredded coconut Good pinch of salt Add your Copha or coconut oil to a large pan and heat till melted. Take off the heat and add the chocolate and mallows, put back on a low heat and stir till melted and combined. Take off the heat and add the salt, Rice Bubbles, craisin
Ali Stoner on Instagram: "🎄🏴󠁧󠁢󠁳󠁣󠁴󠁿 CHOCOLATE BLACK PUDDING 🏴󠁧󠁢󠁳󠁣󠁴󠁿🎄 When I was younger, my mum always made a traditional Christmas pudding every year. We always dutifully had a slice, but what we always preferred was her ‘Chocolate Crunch Christmas Pudding’ which looked the same, but was a no bake version made from chocolate, biscuits & alcohol soaked fruit. In honour of this memory, this chocolate “black pudding” - so called because of its similarity to its meaty brother - contains sweet ingredients, but also remembers the original with added oatmeal & spices, with an uncanny visual resemblance! Think of it as a ‘Yule log’ and it may become one of your family favourites too! 1 tsp ground all spice 1 tsp cinnamon Half tsp nutmeg Half tsp ginger Half tsp flakey salt 100g

Not so much a bread, more like a chocolate nougat. With this much sugar & honey in the mix, it’ll last indefinitely. Also, very easy to wrap large slabs to gift to friends & family. To serve, sharp knife & cut thin slices to serve like you might chocolates or truffles. Here’s how, this is an old recipe of mine from @guardianfeast … we used to make it often for our restaurant at Xmas time. Vegetable oil, for greasing tin 40g unsweetened cocoa powder 100g bitter chocolate, chopped 300g mix of toasted almonds and hazelnuts, 100g plain flour (I mixed up rye & wholemeal flour instead of white) 200g candied mixed

Instead of brandy butter, make your own brandy sauce this year. It’s very simple, and the perfect accompaniment to your dairy free Christmas pudding. For the best flavour use the same spirit as that used in the pudding, eg rum sauce with a rum-flavoured pudding. The sauce is also lovely with other hot pies and desserts.
