Julienne zucchini 'pasta' with broiled chicken avocado/coconut sauce. I used three zucchinis and it produced quite a bit of 'pasta.' One avocado, two tablespoons of coconut milk, a pinch if cayenne pepper, a quarter of a tomato and the juice of half a lemon for the sauce (really it's up to you and your taste buds). Cut the chicken into small cubes, 15-20mins on 180 (I didn't season mine). Totally filling and satisfying. Swapping the zucchini for quinoa tomorrow for lunch.
