Brussel sprouts have a bad reputation mostly through overcooking or produce not been fresh, which can result in a bitter taste. This is a great recipe to use as an introduction to these ‘fairy cabbages’—raw and thinly sliced, with a delicate flavour, they make a great base to a slaw. There is something quite satisfying and decadent about roasted pork and crackling, using a gorgeous rack cut and cooking medium to deliver a juicy, melt-in-your-mouth dish with the subtle hint of maple syrup. Gone are the days where you cook your pork until it was dry and well done. It is quite safe to eat pork cooked to medium (juicy and slightly pink). Mmmmm drool. I can’t believe that we have made it to November and that Christmas and summer is just around the corner. Over the summer, we tend to put our ‘party pants’ on and quite often make Espresso Martinis for the whanau as a nightcap after a shared meal. In this twist, we make a version using Baileys. Who needs dessert when you have super easy, fast and delicious cocktails! for more information go to our website for the recipe

We have crumbed and fried our fish, but feel free to season and grill for a more healthy version. We have kept these tacos fresh and citrusy and we’re using tangerines from our backyard which are in abundance at this time of year. Tangerines can be peeled and eaten straight from the tree. They hold a strong, sweeter flavour to that of an orange and are great when added to salads (as we have here), as well as mains, desserts or baking. Delicious, crispy, and a lil’ over-indulgent… damn right, and totally worth it! If you’re anything like our family, you will be fighting over them so make sure you make plenty to accompany your dinner. Duck fat is incredibly tasty and just seems to make roast potatoes extra amazing. Leftover duck fat can also be stored in the freezer for quite a long time.
